When Charles Phan opened his now-legendary restaurant, The Slanted Door, in 1995, he introduced American food lovers to a new world of Vietnamese food: robustly flavoured, subtly nuanced, authentic yet influenced by local ingredients and, ultimately, entirely approachable.
